PERFECT CHEDDAR CORNBREAD MUFFINS

Serves: 24 mini muffins
Ingredients
1 cup
sifted all purpose flour
1 cup
yellow or blue cornmeal
¼ cup
sugar (or sub honey)
4 teaspoons
baking powder
¾ teaspoon
salt
2
eggs
½ cup
grated cheddar cheese
1 cup
milk
¼ cup
melted butter
Step by Step Instructions
- Sift flour, sugar, baking powder and salt
- Add eggs, milk, cheese and butter
- Beat until smooth do not overbeat
- Lightly grease muffin pan and pour in batter
- Oven at 425 - Cook for 17-22 minutes
