Roasted French Breakfast Radishes

<p>After reading a recipe in a magazine recently I made up my own version of roasted radishes. <br /> I made veggie burgers for dinner and added the radishes and mushrooms to the burger along with some thinly sliced avocado and (optional) cheese.<br /> Very <span class="caps">GOOD</span>!!<br /> My husband doesn’t like radishes but he <span class="caps">LOVED</span> this version.</p>Source: Suzy Downing (Entered by Suzy Downing)
Serves: 2-4 servings depending on how high you stack your burgers!
Vegetarian!
Ingredients
one bunch
French Breakfast Radishes
one box
button mushrooms
1-2 TBS.
extra virgin olive oil
to taste
Sea salt
to taste
cracked pepper
Step by Step Instructions
- slice thinly the radishes and mushrooms and coat in the olive oil. Add salt and pepper to taste. Roast in 400 degree oven for 10-15 minutes until mushrooms have shrunk and look brown. Radishes will look wilted.
- add to your burger along with some sliced avocado and enjoy!
