Ingredients
1 3/4 cups
Flour
2 teaspoons
Baking powder
1/2 teaspoon
Baking soda
2 tablespoons
Brown sugar
1 teaspoon
Salt
1 teaspoon
Cinnamon
1/4 teaspoon
Ground nutmeg
1/4 teaspoon
Ground ginger
1 3/4 cups
Buttermilk
3/4 cup
Sweet potato puree
2
Eggs
1 teaspoon
Vanilla extract
Butter for cooking and serving
Toasted pecans for serving (optional)
Maple syrup for serving (optional)
Step by Step Instructions
- Whisk together the flour, baking powder, baking soda, brown sugar, salt, cinnamon, nutmeg, and ginger. Set this bowl aside
- In a separate bowl, whisk together the buttermilk and sweet potato puree, then add eggs and vanilla. Add the flour mixture to the sweet potato mixture and stir until combined.
- Cook the pancakes in a buttered skillet for about 3 minutes each side. Serve topped with butter, pecans, and/or maple syrup.
