Ingredients
1 pound
Flounder
1/3 cup
Chopped pepper or peppers of choice
1/4 cup
Chopped onion
1 tablespoon
Olive oil
1 medium sized
Tomato (chopped)
1/4 teaspoon
Salt
1/8 teaspoon
Garlic powder
1/8 teaspoon
Ground cumin
1/8 teaspoon
Pepper
4
Tortillas (warmed)
1 tablespoon
Fresh cilantro (minced)
Step by Step Instructions
- Place the flounder in a greased 7 by 11 inch baking pan. Set the oven to 350 degrees and bake it uncovered for about 20 to 25 minutes. Remove it from the oven and cut it into 1 inch pieces.
- In a skillet, saute the chopped pepper and onion in the oil. Stir in the tomato, salt, garlic powder, cumin, and pepper. Cook for about 1 minute, stirring them all together. Add the flounder, mixing it in as well and letting it heat through.
- Spoon the mixture into the tortillas, sprinkle cilantro over the mixture within, then fold the tortilla and enjoy.
