Roasted Butternut Squash

Butternut squash
Olive oil (for drizzling)
Salt & Pepper
Chopped parsley (for garnish, optional)
Step by Step Instructions
- Peel the butternut squash with a vegetable peeler, working downwards from the stem. Chop the stem off, then cut the squash in half vertically. If the squash is too hard to cut, soften it slightly by heating it up a bit in a microwave or oven.
- Scoop the seeds out with a spoon, discard the seeds, then cut the squash into cubes. Try to make the cubes the same size if possible.
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Lay the cubes on the baking sheet, then toss them gently with the oil, salt, and pepper.
- Roast the butternut squash cubes in the oven for 30 to 35 minutes, then serve as desired. Garnish with fresh chopped parsley if desired.
