Steak Fajita Quesadillas

Ingredients
1 pound
Skirt steak
2 tablespoons
Olive oil
Salt & Pepper to preferance
1 teaspoon
Chili powder
1 teaspoon
Cumin
1
Onion (sliced)
4 cloves
Garlic (sliced)
3
Bell peppers (sliced)
1
Jalapeno pepper (sliced)
1 tablespoon
Butter
4 large
Tortillas
2 cups
Mexican blend cheese
Guacamole (for serving)
Sour cream (for serving)
Salsa (for serving)
Fresh cilantro (for garnish/ serving, optional)
Step by Step Instructions
- Season the steak with oil, salt, pepper, chili powder, and cumin. Cook the steak on high heat for 3 minutes on each side. Let the steak rest for 10 minutes.
- While the steak rests, saute onion and garlic. Once slightly translucent, add the bell peppers, jalapeƱo, and salt & pepper to preference. Cook slightly. Slice the steak into thin strips, then add it to the pepper mix. Remove the mixture from the heat and set it aside.
- Using a new pan, melt the butter and place a tortilla into it. Add the cheese & steak mixture then top with another tortilla and pat down. Cook until one side is golden, flip over, then cook until the other side is golden. Remove from the pan, cut into quarters or eighths. Repeat.
- Serve with guacamole, sour cream, and salsa. Add some fresh cilantro as a garnish or dip mix-in if desired.
