FOR THE SWEET POTATO CHEESE:
1 1/2 cups
Ricotta cheese
1 1/2 cups
Cottage cheese
1 1/2 cups
Sweet potato puree
1 tablespoon
Fresh rosemary (chopped
FOR THE SAUCE:
2 tablespoons
Olive oil
1 large
Onion (finely diced)
3 large handfulls
Spinach
24 ounces
Marinara sauce
1 tablespoon
Dried oregano
2 teaspoons
Garlic powder
1 pinch
Salt
1 pinch
Pepper
ADDITIONAL:

Lasagna noodles
1/2 cup
Mozzarella cheese
Step by Step Instructions
- Preheat the oven to 375 degrees and grease a baking pan with nonstick spray. Prepare 12 lasagna noodles as directed by the packaging, then set them aside.
- Mix the ricotta, cottage cheese, sweet potato puree, and rosemary together, then set the mixture aside.
- Heat the olive oil in a skillet over medium heat. Add the onion and saute for 5 minutes. Add the spinach and saute for 2 minutes. Add the marinara sauce and simmer for 2 to 3 minutes on low heat.
- Layer the noodles, cheese, and sauce in the baking pan, ending with a layer of noodles on top. Bake for 25 minutes, sprinkle with mozzarella cheese, bake for 5 to 10 more minutes, then serve.
