Honey Taffy

Ingredients
1 1/2 cups Honey
Cooking spray

Step by Step Instructions
  1. Line a baking sheet with parchment paper and lightly coat it with cooking spray. Spray any other kitchen surfaces you intend to place the honey while preparing the taffy with cooking spray.
  2. Put the honey into a saucepan, then cook it uncovered over medium heat over medium-low heat until the honey begins to boil (about 8 minutes). Once a candy thermometer registers the temperature as 280 degrees, pour the honey onto the prepared pan and spread it out evenly across the surface. Let cool for 20 minutes.
  3. Lightly spray your hands with cooking spray (you may wear gloves if desired, just make sure to apply the spray to them). Fold the honey into a ball, then stretch it into a 2 foot long strand. Double the strand back onto itself twice and press the ends together. Repeat for 5 minutes
  4. Wrap the honey in plastic wrap that has been coated in cooking spray, then chill it for 10 minutes. Coat a knife in cooking spray (not the handle), then cut the taffy into 4 equally sized pieces.
  5. Roll each of the 4 sections into 12 inch logs, then cut each log into 6 pieces. Roll each of the pieces into a log, then wrap them in confectionery paper, cellophane wrappers, or wax paper.
