Puttanesca Pork Chops

Ingredients
4 1-1 1/4 pound Boneless pork loin chops
1/2 teaspoon Pepper (divided)
1/8 teaspoon Salt
2 tablespoons Olive oil (divided)
4 cloves Garlic (chopped)
2 Minced anchovy fillets (or 1 teaspoon anchovy paste)
2 cups Cherry tomatoes (halved)
1/4 cup Pitted oil-cured olives
1 tablespoon Capers (rinsed)
1/4 cup Dry white wine

Step by Step Instructions
  1. Season the pork chops with the salt and 1/4 teaspoon of pepper. Heat 1 tablespoon of oil over medium-high heat in a skillet. Reduce the heat, then add the pork chops. Cook for 8 minutes, turning once, then remove them from the skillet and keep them warm on a plate with foil.
  2. Add the remaining oil, the garlic, and the anchovies to the skillet. Cook stirring for 30 seconds, then Add tomatoes, olives, capers and the remaining 1/4 teaspoon pepper.
  3. Cook stirring for 1 minute, then add the wine and tomatoes. Crush the tomatoes with a spoon, then let the sauce simmer for 2 to 4 minutes.
  4. Add the pork chops (and any juices they have produced) to the skillet and turn them to coat them with sauce before serving.
