Savory Waffles with Bourbon Seafood

Ingredients

Eggs (separated)
2 ounces
Grated Parmesan cheese
1 cup
Milk
1/2 teaspoon
Salt
1/2 teaspoon
Pepper
2 cups
Flour
4 ounces
Butter (melted, divided)
2
Shallots (minced)
1 pound
Large shrimp
8 ounces
Scallops
1 1/2 cups
Honey
OR maple syrup
2 ounces
Bourbon
1 or 2 teaspoons
Lemon juice
2 tablespoons
Chives (snipped)
Step by Step Instructions
- Whisk the egg yolks and Parmesan together, then whisk in the milk and salt. Whisk in the flour, and once the mixture is smooth stir in 2 ounces of melted butter.
- Beat in the egg whites and salt. Fold this mixture into the Parmesan mixture, then let stand for 1 hour.
- While the mixture sits, saute the shallots in the remaining butter. Once they are soft, add the shrimp and scallops and cook for 1 or 2 minutes.
- Mix the honey or syrup with the bourbon and lemon juice in a bowl (add additional seasonings to taste). Add the mixture to the skillet with the seafood and let simmer for 1 or 2 minutes. Stir in the chives
- Pour batter into a waffle maker, cook as desired, then top the waffles with the seafood mixture.
