Gumbo Z’Herbes Recipe (Green Gumbo)

Ingredients
3/4 cup Peanut or vegetable oil
3/4 cup Flour
1 large Bell pepper (preferably green) (chopped)
2 Jalapeno peppers (chopped) (optional)
OR 2 serrano peppers for more heat
1 large White onion (chopped)
2 stalks Celery (chopped)
4 cloves Garlic (chopped)
2 tablespoons Cajun seasoning (or to taste)
8 ounces Andouille sausage sliced into ¼ inch slices (optional)
8 ounces Diced smoked ham (optional)
6 cups Vegetable or chicken broth
2 pounds Mixed greens such as:
Collards
Mustard greens
Turnip greens
Chard
Dandelion greens
Beet greens
Kale
Or any other greens you may care to use
2 Bay leaves
1 tablespoon File powder or to taste (for serving, optional)
Cooked rice (for serving, optional)

Step by Step Instructions
  1. Pour the oil into a pot and turn the heat to medium. Add the flour and stir the two together. Continue stirring constantly for 20 to 30 minutes to allow the mixture (a roux) to turn dark brown.
  2. Add the peppers, onion, and celery to the pot and cook stirring for 5 minutes. Add garlic and two meats (if you're using them), and Cajun seasoning. Cook another minute, stirring.
  3. Add the broth and greens of your choice to the pot, then add the bay leaves, reduce the heat, cover the pot, and let cook simmering for 90 minutes.
  4. Remove the pot from the heat, stir in the file powder (if using), and serve the gumbo over rice or in a bowl.
