Ingredients
2.2 pounds
Pork shoulder or pork tenderloin (sliced into one inch thick pieces)
4 to 5 cloves
Garlic (peeled & crushed)
4 tablespoons
Vegetable oil
1 1/2 cups
Tomato puree (or crushed)
1/2 cup
Water
1/2 teaspoon
Dried thyme
Salt & pepper to taste
2 or 3
Bay leaves
ADDITIONAL OPTIONAL SAUCE INGREDIENTS INCLUDE:

Step by Step Instructions
- Preheat oven to 400 degrees. Slice the pork into small pieces and season them with salt & pepper. Put the pork pieces into a 9 by 13 roasting pan.
- Put the crushed garlic and salt into a measuring cup, then add the vegetable oil one spoonful at a time and stir continuously to form a paste.
- Add the tomato puree, dried thyme, and water. Stir and season to taste with salt & pepper.
- Pour the tomato sauce over the pork slices and ensure they are well covered by it. Add the bay leaves to the pan.
- Cover the roasting pan with aluminum foil and bake for 45 minutes. Remove the foil and bake for 15 more minutes.
