Sauteed Strawberry, Sausage and Shrimp Salad

Ingredients
FOR THE SAUTE:
2 tablespoons
Grapeseed oil
1 pound
Shrimp (peeled & deveined)
1/4 cup
Diced yellow onion
1 teaspoon
Sea salt
1/2 teaspoon
White pepper
6 ounces
Cooked Italian sausage (diced small)
1/4 cup
White wine
1 pint
Strawberries (quartered)
1/4 cup
White balsamic vinegar
6 tablespoons
Unsalted butter
4 ounces
Feta cheese (crumbled)
FOR THE SALAD:
1 cup
Lettuce (original recipe suggests shredded romaine lettuce)
2 ounces
Basil leaves (thinly sliced)
2 ounces
Olive oil
1 teaspoon
Sea salt
Step by Step Instructions
- Heat the grapeseed oil in a large saute pan, then add the shrimp and onions and let them cook for 2 minutes before seasoning with salt and pepper. Cook for 2 to 3 more minutes
- Add the sausage to the pan and let cook for 2 more minutes. Deglaze the pan with the white wine and let it reduce to half before turning the heat to low.
- Add the strawberries and balsamic vinegar and let cook for 2 minutes. Stir in the butter until the mixture is smooth, then add the crumbled feta cheese.
- Toss the lettuce, basil, olive oil, and sea salt together to combine.
- Serve the shrimp saute topped with the salad mixture.
