Sausage Rolls

Ingredients
FOR THE FILLING:
1/2 tablespoon Olive oil
2 cloves Garlic (minced)
1 small Onion (finely chopped)
1 stalk Celery (finely chopped)
5 ounces Finely minced bacon
2 teaspoons Fennel seeds (optional)
1 pound Ground pork
3/4 cup Panko breadcrumbs
1 Egg
1/2 teaspoon Salt
Pepper to preference
FOR BAKING
2 1/2 sheets Puff pastry (thawed then each cut into half)
1 Egg (lightly whisked)
FOR SERVING:
Ketchup
Mustard
Tomato sauce

Step by Step Instructions
  1. Heat the oil in a nonstick frying pan over medium-high heat, then saute the garlic, onion, and celery for 2 minutes. Add the bacon and cook for 2 more minutes.
  2. Transfer the saute mixture into a bowl and let cool for 10 minutes. Once cooled, add the fennel seeds, ground pork, breadcrumbs, egg, salt, and pepper to the bowl. Mix well with your hands.
  3. Lay out a rectangle of pastry, long edge closest to you, then brush the beaten egg along a long edge.
  4. Take 1/5th of the prepared filling and form it into a long log shape, brush the other long side of the pastry with beaten egg, then roll up the meat in the pastry, sealing up the meat inside. Brush the full log with beaten egg. Repeat.
  5. If possible, refrigerate the logs for 1 hour.
  6. Preheat oven to 350 and line 2 baking trays with parchment paper. Slice the logs into 4 (or 2 if you want larger rolls) equal parts. Brush each roll with beaten egg.
  7. Bake for 30 to 35 minutes and serve warm with ketchup, mustard, and/or tomato sauce.
