Roasted Carrot Hummus

Ingredients
1 bunch
Walker Farms Rainbow Carrots
1 can
garbanzo beans
1/4 cup
tahini
juice from 2 lemons
2 cloves
garlic
olive oil
cumin
paprika
sea salt
pepper
Step by Step Instructions
- Preheat oven to 425 degrees. In a roasting pan or on a large rimmed baking sheet, combine the carrots with olive oil, garlic, cumin, salt and pepper. Roast the carrots until tender and browned, stirring occasionally, about 25 to 30 minutes.
- In a food processor, pulse the carrots, garbanzo beans and some olive oil. Add the tahini, garlic, lemon juice and spices. Mix until smooth (you can add a small amount of water depending on desired texture) and season to taste.
- Enjoy with pita, chips, crackers or fresh veggies!
