Spaghetti Squash Hashbrowns

<p>With its mild and versatile flavor, Spaghetti Squash is a great substitute for potatoes in this recipe.</p>

Ingredients
One Large Spaghetti Squash cut in half and seeds removed
1/3 Cup All purpose flour
1/2 Cup Parmesan Cheese
Salt and Pepper
1/4 Cup Butter
1/2 Cup Sour Cream (optional)

Step by Step Instructions
  1. Preheat oven to 350 degrees. Coat a baking sheet with cooking spray. Place squash halves cut side down on baking sheet and bake for 45 minutes or until squash is fork tender. Remove from oven and let cool.
  2. Scrape strands of squash from shell with a fork. Place in medium mixing bowl. In a small bowl mix flour and cheese together until well blended. Add flour/cheese mixture to the prepared squash and gently fold together until all squash is coated with flour and parmesan cheese.
  3. Melt butter in a skillet over medium heat. Spoon small mounds of squash mixture into skillet. Press gently to make patties. Season with salt and pepper. Brown for about two minutes, flip and brown second side. Remove to a plate and serve with a dollop of sour cream if desired.
