Bubble and Squeak

Serves: 2-4
Ingredients
1 head
cabbage, sliced/chopped
1
onion, chopped
1 Tbsp
olive oil
1/2 tsp
sea salt
1/4 tsp
ground black pepper
1-2 lbs
potatoes, cubed and boiled until just soft
1 Tbsp
fresh parsley
1 Tbsp
margarine
2 Tbsp
soy milk
2-4
Tofurky-brand beer brats, diced and sautéed (optional)
1
Sweet Cayenne pepper, diced and sauteed with sausages (optional)
Step by Step Instructions
- Sauté cabbage, onions in olive oil. Add salt and pepper.
- When cabbage is soft but not limp, add potatoes, parsley, margarine and soy milk. Stir to combine and mash potatoes slightly.
- Add sausages, if using.
- Serve warm.
